RecipeShare: Easy chicken curry

Serves 4 people

Ingredients

  • 3 tablespoon grape seed oil
  • 1 teaspoon ghee
  • 1 small onion, sliced thinly or thickly (your choice)
  • 1 lb. chicken (breast or thighs), cut into bite size pieces
  • 1 teaspoon crushed garlic
  • ¼ teaspoon turmeric
  • 1 teaspoon sea salt or to taste
  • 1½ teaspoon coriander powder
  • ½ cup crushed tomatoes
  • ¾ teaspoon cumin powder
  • ½ teaspoon cayenne pepper (or to taste)
  • 1 teaspoon paprika
  • rice, for serving

Directions

  1. Heat oil in a pot.
  2. Add onion and fry on medium heat until the onion lightly browns.
  3. Reduce the heat to low and throw in the cubes of chicken.
  4. Add the garlic, turmeric, sea salt, coriander powder, crushed tomatoes, cumin powder, cayenne pepper and paprika.
  5. DO NOT stir.
  6. Close the lid and simmer for 10 minutes.
  7. Stir gently so that the chicken is coated in the warm spice mix (called masala).
  8. Close the lid and further cook until the chicken is cooked through, about 5 minutes.
  9. Serve with rice.

NOTE: The spices can be easily found at any major grocery store in their spice aisle.
