RecipeShare: One-pot chicken sausage, white bean and kale soup

Ingredients

  • 3 pre-cooked chicken sausages, cut into ½-in. slices
  • 1 tbsp. olive oil
  • 1 large sweet potato, cut into ½-in. chunks
  • ½ red or yellow onion, diced
  • ½ c. red wine (or broth if you don’t want to use wine)
  • 1 15-oz. can white beans (great northern or cannellini), drained & rinsed
  • 1 tsp. red pepper flakes, optional
  • 4 c. broth of your choice
  • ¾ c. orzo pasta (or other very small pasta)
  • 2 c. kale or spinach, finely chopped (you could throw a head of fresh kale in the food processor for this, or use frozen kale or spinach)
  • splash of balsamic vinegar
  • salt/pepper, to taste
  • Parmesan cheese for topping

Directions

  1. Bring a large Dutch oven to medium-high heat. Add chicken sausage slices and saute until lightly browned on both sides. Remove from pan and set aside, keeping warm.
  2. Add olive oil to hot Dutch oven and once shimmer, add sweet potatoes and onions. Stir around and let saute for a few minutes, stirring every once in awhile. When all the oil has been absorbed and the bottom of the pot is starting to dry out, deglaze with red wine (or broth). Stir up any brown bits.
  3. Add drained and rinsed white beans to pot, along with red pepper flakes if using and 4 cups of broth. Bring to a gentle boil.
  4. Once the broth is boiling, add in pasta and continue to boil for about 5-7 minutes. You don’t want to overcook the pasta, as it will continue to cook in the hot broth.
  5. Stir in chopped kale or spinach and heat until it’s warmed throughout. If you need to add more water or broth, do this now and bring back to a gentle simmer.
  6. Finish with a splash of balsamic vinegar and salt/pepper to taste. Top with Parmesan cheese.
