RecipeShare: Salmon loaf

Recipe from Sue Zelickson, author, food activist and founder of Women Who Really Cook.

Serves 8 to 9 people

Ingredients

  • 1  16 oz can of red salmon , drained and flaked
  • 1/2 cup milk
  • 2 cups bread crumbs, panko or cracker crumbs
  • 2 eggs , beaten
  •  1 1/2 T. minced fresh parsley or cilantro
  • 2 T. chopped or minced onion
  • 1 T. grated lemon peel and juice
  • 2 T. butter, melted and cooled
  • 1 t. dried dill weed
  • 1 t. salt
  • freshly ground pepper

Directions

Combine all ingredients , mix thoroughly. Place in greased 9x5x3 loaf pan. Bake at 350 degrees for about 45 minutes to 1 hour. Let cool and slice. Makes 8 to 9 servings.
